What’s for Dinner?

OK! The soup was a hit! It was gone before lunch the next day which is a very good sign.

I was given a $50.00 gift card for Safeway for Christmas so I stopped by after work to find something for dinner. It was after 7:00p.m., and I was shopping hungry!

I haven’t been in Safeway for a long time  and headed straight to the organic vegetables and I was pleasantly surprised to see they had expanded their organics!

After purchasing fruit and veggies I had about $12.00 left for something filling that would please most everybody….Frozen Fish? looked good, says it’s sustainably caught but didn’t offer any real information….?…really tempted to buy my youngest the chicken nuggets she likes but those are most definitely abused birds..vote with your dollar..really tempted to by those flakey looking breakfast pastries for the morning…MMmmmm! don’t those look good! “There’s about a hundred ingredients..don’t even think about it”…I ended up with Amy’s Organic Pizza. Healthy? Filling! Fast! Easy!

Day 1

The Mexican Lentil tortilla Soup recipe turned out great. It was only supposed to take about 10 minutes prep time and although the recipe was easy I felt as if I was cooking all day because I needed to stop and get some of the ingredients: celery +.. and although I had checked that I had the ingredients ahead of time I assumed I had carrots….wrong; so, another trip to the store. Same thing happened when I made the Goji berry chocolate drops.  I had purchased almonds for the recipe this week but they were eaten before I could make the recipe. There I am with my melted chocolate and no almonds…uggghh,No!  I didn’t really give in and use the not as fresh almonds I had on hand. Big mistake! What a waste of beautiful chocolate and goji berries!!!! They are o.k. But they could be so much better!!!

Food Babe in California

  • Here it goes I am starting my first ever blog. My new year’s resolution is to have fun and my blog is my 30 day commitment to make some incremental lifestyle changes with the support of the FOOD BABE, Vani Hari, and her new book coming out in February that I am really looking forward to: THE FOOD BABE WAY. I will blog periodically throughout the week for the next 30 days

What I like about the FOOD BABE website: http://foodbabe.com/ is that it has delicious recipes. Vani also shares ideas from her vast experience in formulating a healthy lifestyle. She investigates and keeps us informed of the ingredients of common processed foods that we eat and she/we hold corporations accountable to us, the consumers, living breathing human beings that want simple, healthy, nontoxic, food free of pesticides, gmo’s, additives, and animal cruelty. Food that is grown sustainably.

I want to get back to basics in a very complex society.

My objectives are to try more recipes, be more informed, and develop more lifestyle eating habits that will benefit my family and myself. We are a family of six. If you look in my cupboards you will see some processed foods. Old habits are hard to break, and I am not the only person in the household with opinions regarding our food choices.

My favorite recipes from the FOOD BABE thus far are

for breakfast: Quinoa Veggie Scramble and the Hari Shake. In summer I loved the Cup of Gazpacho, and I tried most all Vani’s Thanksgiving recipes and created a fabulous Thanksgiving meal. I fell absolutely in love with and still make regularly the Stuffed Wild Mushrooms and the Kale Cranberry Walnut Salad with Mint Orange Vinaigrette.

Ok. Lifestyle changes I hope to make:

Lemon water in the morning? I am very fond of a squeezed lemon in the morning with sugar…with cayenne? Not to sure.

More greens…I need a blender for smoothies. We wore out our Nutribullet.

Cook More. Shop more. Be more informed.

Loosing 10 lbs. would be a bonus! tho it’s not my main objective

Weaknesses: Sugar, Caffeine, time, budget constraints

I will be trying recipes and suggestions from the FOOD BABE blog, and the monthly eating guide until I receive the book.

I ordered an extra copy of the book if (once I get it) anyone local wants to borrow it and try this with me.
